Herbert Ernst Eckmann, a German immigrant and Anchorage business leader whose life story epitomized the American Dream, died on September 30, 2023.  He was 87.


As owner of Alaska Sausage and Seafood Company, Herbert was a fixture in the local business community for six decades.  He established himself early as a savvy businessman with exceptional instincts who understood the importance of high quality products, treated his employees and associates fairly, and always put his customers first. 


What began as a small, struggling game processing operation grew rapidly under Herbert’s leadership.  Offerings expanded to include custom fish processing, gourmet sausages and smoked Alaskan salmon sold throughout Alaska, and European exports.  His radio ads made his German accent familiar all over the state, including his signature line, “Just tell ‘em Herb sent you!”  He was recognized while waiting in line or in public venues, just by the sound of his voice.


Born in February, 1936 in Rügen, East Germany, an island in the Baltic Sea, Herbert’s childhood years were powerfully shaped by World War II and its aftermath.  His father was called away to serve in the German army and never returned.  His mother Helene, who was left to raise Herbert and his younger brother Rudolf on her own in Russian-occupied East Germany, labored to build a laundromat business only to have the Russian government conscript all her equipment, leaving her with nothing.  Sometimes they ate only potatoes and cabbage found in local fields.


Shortly after his 15th birthday, Herbert traveled 350 miles from home to become a chef’s apprentice.  After a couple of years his mother’s life in East Germany became intolerable; unauthorized travel was not allowed so Helene made plans to sneak out of the country and hired a near stranger to get Herbert and Rudolf and escort them to West Germany where she would be waiting.  Their escort was arrested during the escape process, leaving Herbert, only 17, to lead himself and his brother to freedom without help – which he did, through a series of remarkable circumstances which Herbert always believed were Providentially inspired, and for which he never stopped being grateful.


In West Germany, Herbert continued his work as a chef’s apprentice, moving steadily to more complex jobs with greater responsibility, eventually working for the United Nations hotel on the shores of Lake Geneva.  He saved his money and studied English, French, and Spanish every night so he could communicate with international customers, then enrolled in Hotel Management School in Heidelberg, Germany.  It was there that he met Eva Eitel, a German student who he married a year after he graduated.


At age 26 he flew to Anchorage in search of opportunities, leaving his wife and baby son behind him in Germany.   They joined him later that same year.  Lean times awaited the young family, as Herbert could not find work in the restaurant industry and they spent a cold winter in a drafty trailer with limited heat.  Herbert took a job cutting meat for Lou’s Market on 9th & Gambell.  Recognizing a need among Alaska’s hunters, he and his friend Otto Poehling opened the doors of Alaska Sausage Company in June, 1963.


After 10 years of successful partnership, Herbert bought Otto’s share of the business and was sole leader of the Company for 33 more years until his son Martin took over in 2007.


An avid outdoorsman, Herbert loved to hunt, fish, ski, ice skate, and hike.  For years, he climbed Flattop several times a week after work.  He took the family on river float trips and camping excursions.  He flew in charter planes all over the state hunting for moose, caribou, sheep, bear, and fowl, all of which he field dressed with a legendary commitment to keeping his meat clean.  He had a deep love and admiration for Alaska, which he considered the most beautiful place on earth.


Eva died of cancer in 2002, after which Herbert met and married Kathryn Malotte.  Herbert and Kathryn enjoyed almost twenty years together travelling, gardening, hosting friends and family, and visiting the lake cabin they built together in Willow.  He was devoted to his family and was never happier than when he was in their midst. 


Herbert served on the board of Alaska Children’s Services (AK Child and Family) for 20 years and was active in the Rotary Club and the Anchorage Chamber of Commerce.  He was a member of Central Lutheran Church for decades and served on their board.  Currently he was a member of Word of Life Lutheran.


He had many friends and was adept at keeping them, maintaining contact with childhood acquaintances and frequently meeting friends for coffee.  He and Otto, lifetime friends, walked together every day until just a few weeks ago.


Herbert is survived by his wife, Kathryn; his three children and spouses, Sebastian Eckmann and Nancy Gehm, Iris and Russ Morton, Martin and Robin Eckmann; grandchildren Anneliese Eckmann, Karl and Alexa Eckmann, Leah Morton, David Morton, Heidi Eckmann, Cameron Eckmann, and Trevor Eckmann; his sister-in-law Jutta Kappel, niece Alea Eckmann and her daughters Enya and Yuna; and a rich circle of friends.  He was preceded in death by his parents, his brother Rudolf, and his first wife Eva.


A memorial service for Herbert will be held Tuesday October 17 at 2 pm at Central Lutheran Church, followed by a Celebration of Life Reception from 4-6 pm at Changepoint Church.  More information is available under the Events tab.


Donations in Herbert’s honor may be made to one of the charities he was proud to support:  AK Child and Family, the Alaska Christian College, or the Anchorage Gospel Rescue Mission.

I sadly just saw Herbert‘s picture in the ADN tribute section. I was away and didn’t see the notice of his death.
I remember a remarkable person. Picture here is from his 2007 visit with Kathryn to Ken Petersen‘s dream cabin in northern Minnesota.
I remember when Kathryn “found” Herbert, it seemed to change her completely from a person who aopeared very sad to one who was joyous.

For years I’ve loved listening to the pride, kindness, and joy that he’s expressed in talking about Alaska Sausage, and eventually Martin. When my husband & I moved back to Anchorage in the winter of 2021, he couldn’t be with me when I picked out & purchased our home. When I found a house that I thought might be our new home, I called Herb & Kathryn & asked them to check it out with me the next day. Herb brought his son Sebastian with him. As I had known that there were some immediate changes I would need I appreciated all of their eyes. When the bidding war started my husband called Herb & asked him if it was still worth what we were just about to offer? Herb assured us it was. We moved in to our new home in ANC in April 1, 2021. Tonight my husband & I toasted Herb with a can of MN 1919 Rootbeer. Herb has always impressed me. I know his faith to be strong & his intellect to be unparalleled. His work ethic could not be missed. His willingness to help & share wisdom always appreciated. He was & is an indelible part of my Alaska. My Anchorage. My family is better off & blessed to have called him a friend.

I served with Herb for years on the AK Child & Family board. He consistently exemplified class, sincerity, and integrity. The persistence, hard work, and vision that Martin described was there, too. I ran into Herb many times in coffee shops, Flag Day, and other events over the years, and he was always kind and helpful. He helped us plan our trip to Deutschland! And my family is partly made of his sausages - we're regular buyers and send the gift baskets across the U.S. every year. He left the place better than he found it. I grew up with Martin and have always considered him one of my closest friends. I dont remember seeing Mr. Eckmann until the 1990's since he was running a business. When Martin was away throughout the 1990's, I lamented with Herb on a weekly basis about the prospect of Martin coming home someday and I always felt a special kinship with him over how much we missed Martin and always felt like he enjoyed our kinship since he missed Martin so much. Herb always looked after me and helped whenever I asked for it. We are lucky to have had him for as long as we did. The legacy of old world german quality has been passed along and is alive and well....lucky for all of us.

I remember Palm Sunday at Central Lutheran (close to 50 years ago?), my family was sitting behind yours, we had all received a long skinny palm frond to hold and waive about. As I was right behind your Dad, I decided it would be great fun to tickle his ear with it (during the reading or the sermon). He swatted at his right ear once but then realized what was going on (after the second time) and turned in his seat and gave me that knowing but mischievous look. I stopped immediately. Your Dad was many remarkable things, but the thing I wanted to highlight for you was that children knew they could have fun with him. What a great legacy! Martin, your tribute ended with three words, "I'll miss you." Indeed. I cannot yet fathom "losing" my father but I believe, when that day comes, I too will take comfort in the knowledge that, while I too will miss mine, I will see him again because both of our dads loved God, and believed in and trusted in and proclaimed the name of Jesus before man. Martin, Choo, Iris, your family holds a very dear spot in the collective heart of the Parnell family. We love you all.

I was one of Alaska Sausage's first customers, which started a long-time association with Herb. I interviewed him many times on Alaska Outdoors Radio Magazine, and he was my guest on Alaska Outdoors TV show. Herb always discussed the how-to and importance of keeping game clean and shared personal fish and game dishes recipes. We shared a love for Alaska outdoors and a strong belief in God. My most memorable times with Herb was when he closed Alaska Sausage for one day and put a sign on the door reading, Gone Fishing. He and his employees took the day off and went fishing. I was an invited guest and wrote about one such day.

Closed Gone Fishing

As a boy, I recall seeing a movie about a small-town doctor who did a lot of good for the local young people. Most of it was accomplished on the riverbank drowning worms during office hours. The community leaders, led by the banker with whom a loan was past due, were always after him to shape up and tend to his practice. When the collector came calling, the doctor was away with the young people on the riverbank, and there was a sign on his office door announcing he was “Closed. Gone fishing.”

Rumors run rampant that everyone closes up and goes fishing when the sun shines in Southeast Alaska. Petersburg claims 37 rain-free days per year, and outdoorsmen from dryer climates would excuse the truancy and probably even encourage it. The truth is they don’t close up and go fishing.
They do it just like everyone does it everywhere else. They talk about it on sunny days, wonder why it forever rains on the weekends, only clears up on Mondays, and wish they didn’t have to fish in the rain.

I suspect every fisherman’s dream is to put a sign on the door occasionally and let the world know that priorities are correct for at least one day a year. Once a year, the folks at Alaska Sausage Company do just that. They close down for a day and put a sign on the door, “Closed. Gone fishing.” The staff, management, spouses, and friends pack it up and head for water.

Company owner Herb Eckmann, a chef by trade, was born in Germany, and his coming to America is a great success story. While attending hotel management school in Heidelberg, he became friends with two schoolmates, Hans Krueger and Robert Schreck. This friendship and its late-night discussions at school in Heidelberg in 1958 and 1959 set up the process whereby Eckmann and his two friends immigrated to America and Alaska.

Hans, able to secure a sponsor, came first, and then they sponsored each other. Alaska diners recognize Hans Krueger as master chef and owner of the Corsair Restaurant in downtown Anchorage. After working as a chef in many European countries, Herb immigrated to Alaska in 1961. His first month in America was spent walking around Anchorage looking for a job. Lou Como, proprietor of Lou’s Market at 9th and Gambell, employed the young German chef immigrant. Two years later, Eckman and his new partner, Otto Poeling, purchased the equipment from Lou, and Alaska Sausage Company was born. At first, they concentrated on custom wild game processing and sausage making. As hunters shared their products with their non-hunter friends, a demand for sausage developed, and in their first year of business, they added reindeer sausage.

Alaska Sausage Company started smoking salmon for successful sports fishermen in 1972, and that same year introduced a variety of smoked fish to the general public.

Sharp-looking packaging, a steady flow of new products, and an unconditional guarantee created a new market for Alaska smoked fish. Alaska Sausage’s products include Cajun, Teriyaki, smoked lachs (lox) and smoked kippered salmon. Only Alaska wild salmon of A1 quality are used for these smoked products. Today, their products are sold by major retail stores and supermarkets, purchased as gift packages, and served in many top restaurants.

Old World knowledge and expertise are complemented by their basic business attitude toward customer satisfaction.
Simply stated, Eckmann says, “Without customers, we don’t have a business. We strive to give our customer value for their dollar and back it with our guarantee. You like it or get your money back.”

Eckmann expresses another business philosophy. “I don’t have much patience with people who cry business is bad. There is plenty of business out there, but it has changed. You must go out there and try new ways; be inventive, use initiative, look at your pricing structure, and offer new products and services. Alaska sausage’s sales are steady in a declining economy because our people share that commitment.”

Another common commitment Herb shares with his people is a desire for outdoor recreation. In early August each year, that desire is filled when they put a “closed gone fishing” sign on the door, grab the bus, boat, or plane, and spend the day competing in their own fishing derby. Last year’s outing was spent fishing the tributaries of the Susitna River for silver salmon.

Many nationalities and races are represented on his staff: Blacks, Caucasian, Laotian, Polish, German, Chinese, Philippians, and Vietnamese. In addition to their joint employment, fishing is another thing in common. Their shared interest brings them together each August when they have a slack time between major fish runs and hunting season.

Customers love it when they find the “closed gone fishing” sign on the door. They may have seen the same movie I saw in my youth, maybe heard the rumors from Southeast, or wished they worked for a company that puts fishing before work, even for a day.

Herb explained one of the side benefits is when we bring our fish, we realize how much effort the customers took to get their fish, and we take better care of their catch. Our customers know the difference.

Marylyn Gehrig summed up the feelings on this year’s trip as she explained, “Even though everyone caught fish, the best part of the day was being together in the good weather and sunshine.”

Lieber Martin,

mit Herberts Ableben haben wir einen guten und langjährigen Freund verloren. Die Nachricht von seinem Tod hat uns tief erschüttert und ich persönlich bin sehr betroffen davon.


Im Namen des ehemaligen Alaska-Clubs, mit dem sich Dein Vater sehr verbunden fühlte, aber auch in meinem eigenen Namen, möchte ich Dir unser
tief empfundenes Beileid aussprechen.

Bereits auf meiner ersten Alaskareise im Jahre 1970 lernte ich Herb kennen. Wir hatten sofort einen Draht zueinander und unsere Verbindung hat all die Jahre bestanden. Auf meinen 56 Reisen nach Alaska habe ich Herb fast jedes Mal getroffen. Ausnahmen gab es nur wenn er gerade seiner Jagdpassion nachging.

Herbert war für mich ein freundlicher, zuverlässiger und humorvoller Mensch. Ich erinnere mich gerne an die vielen Besuche im Cafe del mundo, wohin er mich regelmäßig bei meinen Besuchen morgens einlud, selbst wenn das Geschäft es fast nicht zuließ. Herbert hatte dort seine eigene Kaffeetasse, was ihn dort als Stammgast auszeichnete.

Leider kam es in diesem September nicht mehr zu einem persönlichen Treffen, weil ich von Martin erfahren musste, dass Herbert krank im Bett liege. Dennoch gab es einen kurzen Moment wo wir nochmals Verbindung übers Telefon aufnehmen konnten. Im Geschäft hatte ich auf meiner Mundharmonika ein Volkslied aus Deutschland gespielt. Die Sekretärin bat mich, es noch einmal zu spielen, damit sie es für Herbert aufzeichnen könne. Dies tat ich gerne und so nahm sie es mit dem Smartphone auf, um es gleich an Herbert zu übermitteln. Unmittelbar danach kam der Dank von Herbert und er brachte seine große darüber Freude zum Ausdruck.
So war unsere letzte Begegnung musikalischer Art, aber ich bin mir ganz sicher, dass es Für ihn eine große Freude bedeutete.

Herbert ist nicht mehr, wir werden ihn alle vermissen. Inzwischen führst Du lieber Martin den Betrieb hervorragend und ich bin mir sicher, dass Du da auch weiterhin ganz im Sinne Deines Vaters tun wirst. Dazu wünschen wir Dir Kraft und Gesundheit.

Dear Martin,

with Herbert's passing we have lost a good and long-time friend. The news of his death shocked us deeply and I am personally very saddened by it.


On behalf of the former Alaska Club, with which your father felt very connected, but also on my own behalf, I would like to give you our
express deep condolences.

I met Herb on my first trip to Alaska in 1970. We had an immediate connection and our connection has continued throughout the years. In my 56 trips to Alaska, I have met Herb almost every time. The only exceptions were when he was pursuing his passion for hunting.

For me, Herbert was a friendly, reliable and humorous person. I fondly remember the many visits to Cafe del mundo, where he regularly invited me during my morning visits, even when business almost didn't allow it. Herbert had his own coffee cup there, which made him a regular there.

Unfortunately, there was no more personal meeting this September because I found out from Martin that Herbert was sick in bed. Nevertheless, there was a brief moment when we were able to connect again via telephone. In the shop I played a folk song from Germany on my harmonica. The secretary asked me to play it again so she could record it for Herbert. I was happy to do this and so she recorded it on her smartphone and sent it straight to Herbert. Immediately afterwards, Herbert thanked us and expressed his great joy.
So our last encounter was of a musical nature, but I am quite sure that it was a great joy for him.

Herbert is no more, we will all miss him. In the meantime, dear Martin, you are running the business excellently and I am sure that you will continue to do so in the spirit of your father. We wish you strength and health.

Dear Martin, dear Robin and family,

except the Covid years 2020 and 2021 we fished Alaska since 1988 every year. Sometimes twice a year. From the first year till today we brought our fish to Herb and later on to Martin for processing. All the time we feel not like customers but like friends to the Eckmann families. We floated Alagnak River for several times. Whenever Herb stayed in ATA Lodge same time he invited our entire fishing and floating team for fantastic barbecues in ATA lodge. Never we will forget these wonderful parties with Herb in the wilderness. Herb was the one who made the company going on by letting Martin go his own way. Extremly well done Herb!

Years ago I worked at AK Sausage in the office. I would have given anything to stay on but circumstances, unknown to me, it just did not work. I was so very fortunate to interact with Herb on many occasions. You could just tell by his eyes that he was a very caring and honest man. I wish I could tell some of the funny interactions we had. For over ten years we have been allowed to travel irregularly to Alaska to fish. Each time we personally visit the Alaska Sausage and Martin on. In September 2023, I had the opportunity to meet Herbert Eckmann in person for the first time and exchange ideas with him. His proud, but incredibly sober and natural personality have left a very big impression on me. We are very sad that he is now no longer with us. Ich habe Herbert vor mehr als vierzig Jahren getroffen, als ich zum ersten Mal nach Alaska zum Lachsfischen kam.seither haben wir uns jedes Jahr und nach Übernahme des Unternehmens durch dich auch noch mehrmals getroffen. Für mich war dein Vater der Prototyp eines korrekten Unternehmers der Jedem ein Vorbild sein kann.

I believe it was by 1979. I saw an ad in the Minneapolis newspaper for a sausage maker herb said he was coming to Minnesota and he was just getting together a sausage company. He offered me a job but the pay was only $10 an hour we are family meat business also And my dad was paying me $12 an hour. I said I didn’t think that I could probably do it. I regret it very much. I met Herb in 1983 for the first time at his Alaska Sausage and Seafood company as a client . Since then I have been visiting Alaska almost every year and have brought my salmon for smoking to his place. The quality of the processed salmon was outstanding and I was never disappointed. My family and friends at home were also very happy and fortunate to experience this top quality of smoked salmon. So Herb got also a high reputation in Switzerland.
Every year I was looking forward to seeing him again, when I delivered or picked up the fish. He took me many times to Cafe del Columbia and the days after September 11th Herb to took me on a hike at Flat Top Mountain. I wasn’t just a customer, we became friends.
I will really miss him.
I‘m glad, that Martin took over the business and offers the excellent quality sinc then.
May Herb rest in peace.

For decades my family went there because of all the German foods we could get only there. The wurst that tasted like no other. When my mother passed I went to the store and let them know that my mother, Traude, had passed on. Herb teared up as did the gal at the counter. This business is great because the man who built it and handed it down was great. He will be missed but his spirit lives on. I’m guessing he’s already swapping wurst recipes with my mother again.

My dad was an avid hunter and rarely walked away empty handed. He always took his moose or caribou to Indian Valley. He had many conversations with Mr. Eckmann. One year he shot what turned out to be a pretty old caribou. When he brought it in your dad told him—Tom, if you would have waited a few minutes he would have died from old age. My dad loved to tell the story. He passed away in 1988 at the age of 52 from cancer. My sympathies and prayers for your family.
